- 4 Medium Chicken breasts boneless
- 2 Medium Tomatoes, cubed
- 2 Cups Fresh Mozzarella balls cubed
- 1 Tablespoon Olive oil
- 2 Teaspoon Red Wine or Balsamic vinegar
- 1 Clove finely chopped or 1 tablespoon Garlic powder
- 1 Tablespoon Fresh basil
Pre heat oven to 350° lightly spray a baking dish.
Toss tomatoes with garlic and basil and set aside.
Lightly flatten each chicken breast to ¼” thick. Evenly place tomatoes and cubed mozzarella on each chicken breast. Roll up and secure with toothpick. Should you have a surplus of Tomato and Mozzarella just top chicken.
Place chicken breasts into baking dish and drizzle with olive oil and vinegar.
Bake for 30 minutes or until chicken is cooked thru. Remove from oven cover and let rest for 10 minutes.
