CHICKEN SPINACH TORTELLINI SOUP

Prep Time: 5 Minutes Cook time: 45 Minutes

Ingredients:

  • 2 Cloves of garlic sliced
  • 2 Tablespoon Olive oil
  • 1 Bag spinach rinsed
  • 4 Cups of Chicken broth (32 oz)
  • 1 Bag of tricolor frozen cheese tortellini
  • Parmesan cheese for serving

Directions:

In large pot over medium, heat olive oil & garlic until lightly golden.  Add spinach and cover stirring occasionally for 4-10 minutes or until spinach is reduced by half.

Add chicken broth, cover and bring to a boil.

Add tortellini and bring to boil.  After soup has come to a boil reduce to low and cover for 20 minutes.

Remove from heat and let cool.

Serve with parmesan cheese and enjoy.
